Winter Veil Meal

OK, so I was trying to decide between Roast Raptor and Winter Veil Roast, but I went with a third option: Roasted Quail (in my cookbook that is really roast Cornish game hens) in a cherry-balsamic vinegar baste- delicious!

I made one Cornish game hen for each person and served them with wild rice and fresh steamed asparagus. I would have photographed it, but everyone was impatient to dig in. Here’s a picture of the last time I made it.

I will note that when you increase the number of Cornish game hens in the roasting dish you may have to increase the roasting time at 350 degrees. If the hens are crowded together the heat cannot circulate as well and slows down the roasting time. A little bit longer, but well worth it.
